Freeze-dried shiitake mushroom, or tung ku mushrooms, are gourmet mushrooms – they have a very pleasant delicate flavour. Shiitake mushrooms are one of the most popular mushrooms in the world. About 83% of shiitake mushrooms are grown in Japan. They are valued for their rich, salty taste and diverse health benefits. Shiitake mushrooms are used in many different East Asian cuisines.

Freeze-dried shiitake mushrooms trengthen the immune system and help against stress. In Asian countries, eating shiitake mushrooms is believed to improve health and slow down aging. Shiitake contains as many amino acids as meat. Shiitake mushrooms are low in calories. They also provide a lot of vitamins, minerals and other health-promoting compounds.

Shiitake can be eaten fresh or freeze-dried. Dried shiitake has an umami flavor that is even more intense than fresh. Umami’s taste can be described as salty or fatty. It is often considered the fifth flavor alongside the sweet, sour, bitter and salty. A clear umami taste can be especially useful in the preparation of vegetarian dishes. Both freeze-dried and fresh shiitake mushrooms can be used in french fries, soups, stews and other dishes.

Freeze-dried shiitake mushrooms can be stored for a long time

The freeze-dried shiitake mushrooms are packed in jars made of recycled plastic. In addition to the plastic lid, all cans have an additional freshness membrane under the lid, which always keeps the products dry and vacuum. If stored in a sealed container, at room temperature and out of direct sunlight, the products will in principle last for more than 20 years.
This means that all our products will stay fresh and tasty for as long as possible.

Once the jars have been opened, they can be resealed airtight, but it should be noted that the jars must be kept completely dry. It would be advisable to consume the pieces of freeze-dried shiitake mushrooms within 3-4 weeks, as they absorb moisture from the air even if you open the lid of the jar for a while. The jar is resealable, handy and has a nice design that looks nice on your kitchen shelf. It is convenient and practical to use.

Freeze-dried products have a long shelf life and do not require special storage conditions such as a refrigerator. Therefore, it is wise to stock them up at home for unexpected cases, if, for example, you should be left without electricity. They’re also products that can be waiting for you at any time in your country house or cottage – so no matter when you arrive, you’ll always have them to hand. Even if the freezer does a “melting surprise” after a power cut, you will have a healthy snack.
